If you love hosting simple ladies brunch parties as much as I do, you will LOVE these brunch food ideas. We women all brought these dishes to our potluck style brunch luncheon event. Those gals blew me away with their wonderful casseroles and the simple recipes to make them.

While these recipes might look fancy or complicated, they are all pretty easy. Some are make ahead recipes. But they are sure to WOW your crowd with your brunch cooking skills.

This past Mother’s Day, the family did a potluck style brunch for all our family and friends. Not only was the company wonderful, but the food was AMAZING.

Let me share with you the best dishes we had at that Mother’s Day bring a dish party for your recipe file. I also want to remember them for Father’s Day, Easter, and probably even Christmas morning. Heck, New Year’s Day brunch too.

Tips for Planning a Brunch

Here are some tips for planning a brunch that my family and I have learned the hard way over the years.

Plan ahead: I cannot stress this enough. Be sure everyone knows what they should be bringing. The host or hostess needs to know for sure what is coming. If you are cooking, consider dishes that can be prepped ahead.

Plan for dietary restrictions: I have a cousin with a pretty severe gluten issue. My aunt cannot have anything dairy. And me? I do not like onions. I am not saying to cater to everyone’s specific likes and dislikes. Just be transparent about what is in recipes for those with ingredient issues.

Offer a variety of foods: Try to have a well rounded mix of food options. Include healthy, lighter options like fruit. Also include sweet stuff and other heavier dishes.

Pre cut your casseroles: Go ahead and pre cut your casseroles, cakes, and other dishes. Do not just let folks scoop it out or cut it on their own. Trust me, there will be plenty for everyone if the serving size is already predetermined.

Above all, do not skip the Mimosas. Two great Mimosa recipes are below.

This strata (breakfast casserole) was VERY good. I was afraid the recipe would not be enough for all of us. But the casserole is dense and very filling. When you cut it into individual serving sizes, cut each slice a bit smaller than you think you should.

Total Cook Time: Overnight (prepare night before, bake in morning)

Ingredients:

  • Bread cubes (stale bread works best)
  • Eggs
  • Milk
  • Sausage or bacon, cooked and crumbled
  • Cheese (cheddar or Swiss)
  • Salt and pepper
  • Optional: mushrooms, bell peppers, spinach

Instructions:

  • Grease a 9×13 baking dish.
  • Layer half the bread cubes in the bottom of the dish.
  • Sprinkle half the cooked sausage and half the cheese over the bread.
  • Add the remaining bread cubes on top.
  • Sprinkle the remaining sausage and cheese over the top.
  • In a bowl, whisk together the eggs, milk, salt, and pepper.
  • Pour the egg mixture evenly over the entire casserole.
  • Cover the dish with foil and refrigerate overnight for at least 8 hours.
  • In the morning, preheat your oven to 350 degrees Fahrenheit.
  • Bake covered for 30 minutes.
  • Remove the foil and bake for another 15 to 20 minutes until golden and set.
  • Let it rest for 5 to 10 minutes before serving.

I was on the fence about trying these breakfast roll cups that I found from Kings Hawaiian on Instagram. But I am really glad I did try them. Everyone loved them. You simply take a pack of Kings Hawaiian Rolls, hollow out the center of each one, and fill that cup area with sausage, eggs, cheese, etc. They are quick and easy to make. Plus, they are that perfect single serve size.

Total Cook Time: 25 minutes

Ingredients:

  • 1 pack Kings Hawaiian Rolls (12 rolls)
  • 6 large eggs
  • 1/4 cup milk
  • 1/2 cup cooked sausage crumbles
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • Salt and pepper to taste
  • Optional: chopped green onions for garnish

Instructions:

  • Preheat your oven to 350 degrees Fahrenheit.
  • Grease a muffin tin or baking sheet.
  • Take each Hawaiian roll and hollow out the center. Leave a small well or cup in each roll.
  • Place the hollowed rolls on the prepared baking sheet or in muffin tin cups.
  • In a bowl, whisk together the eggs, milk, salt, and pepper.
  • Gently fold in the cooked sausage crumbles and shredded cheese.
  • Spoon the egg mixture into each hollowed roll cup, filling almost to the top.

I think this is the BEST Overnight French Toast Crockpot Casserole. It is SO easy to throw together the night before and cook overnight.

Total Cook Time: Overnight (6 to 8 hours on low)

Ingredients:

  • 1 loaf French bread or brioche, cut into cubes
  • 6 large eggs
  • 1 1/2 cups milk
  • 1/2 cup heavy cream
  • 1/2 cup brown sugar
  • 1 tablespoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 cup butter, melted
  • Optional: maple syrup for serving

Instructions:

  • Grease the inside of your crockpot well with butter or cooking spray.
  • Place the bread cubes in the crockpot.
  • In a large bowl, whisk together the eggs, milk, heavy cream, brown sugar, vanilla, cinnamon, and nutmeg.
  • Pour the egg mixture evenly over the bread cubes.
  • Press the bread down gently to help it absorb the liquid.
  • Drizzle the melted butter over the top.
  • Cover and cook on LOW for 6 to 8 hours overnight.

  • 1 pack Kings Hawaiian Rolls (12 rolls)
  • 1/2 pound sliced ham
  • 1/2 pound sliced turkey
  • 6 slices Swiss cheese
  • 1/2 cup butter, melted
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon poppy seeds
  • Powdered sugar for dusting

Instructions:

  • Preheat your oven to 350 degrees Fahrenheit.
  • Slice the entire pack of rolls in half horizontally, keeping the rolls connected.

Instructions:

  • Slice the baguette into thin rounds. Toast lightly if desired.
  • In a bowl, mash the avocados with lime juice, salt, and pepper.

These Blueberry Sweet Rolls made our Mother’s Day brunch something truly special. They are light and sweet, with a fantastic crunch from sliced almonds sprinkled on top. So Good.

Total Cook Time: 2 hours (includes rising time)

Ingredients for the dough:

  • 3 1/2 to 4 cups all purpose flour
  • 1 packet instant yeast (2 1/4 teaspoons)
  • 1 cup warm milk
  • 1/3 cup sugar
  • 1/3 cup butter, softened
  • 1 teaspoon salt
  • 1 egg

Ingredients for the filling:

  • 1/2 cup butter, softened
  • 1/2 cup brown sugar
  • 1 tablespoon cinnamon
  • 1 1/2 cups fresh or frozen blueberries

Ingredients for the glaze and topping:

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract
  • 1/4 cup sliced almonds

Instructions:

  • In a large bowl, mix the warm milk, sugar, and yeast. Let sit for 5 minutes.
  • Add the softened butter, salt, egg, and half the flour. Mix well.
  • Gradually add the remaining flour until a soft dough forms.
  • Knead the dough for 5 to 7 minutes until smooth.

Ingredients:

  • 2 cups all purpose flour
  • 1 cup sugar
  • 1/2 cup butter, softened
  • 2 eggs
  • 1/2 cup milk
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 cups fresh or frozen blueberries

For the topping:

  • 1/2 cup sugar
  • 1/2 cup flour
  • 1/4 cup cold butter, cubed
  • 1 teaspoon cinnamon

Instructions:

  • Preheat your oven to 350 degrees Fahrenheit.
  • Grease a 9×13 baking dish.
  • In a large bowl, cream together the butter and sugar until light and fluffy.
  • Add the eggs one at a time, beating well after each.

My Aunt Cheryl is the one I call the Low Carb Queen. Naturally, her recipe contribution is low carb. But let me tell you, it is GOOD. Our crowd gobbled it up. They could care less if it was low carb or not. (Note: Aunt Cheryl said the original recipe called for about half an onion diced and sautéed to be added to the casserole, but she does not add it.)

Total Cook Time: 45 minutes (plus overnight chilling optional)

Ingredients:

  • 1 pound breakfast sausage or ground turkey
  • 12 large eggs
  • 1/2 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1 cup chopped bell peppers
  • 1 cup chopped mushrooms
  • 1 cup fresh spinach
  • Salt and pepper to taste
  • Optional: diced onion (Aunt Cheryl skips this)

Instructions:

  • Preheat your oven to 375 degrees Fahrenheit.
  • Grease a 9×13 baking dish.
  • In a skillet, cook the breakfast sausage over medium heat until browned. Drain excess grease.
  • In a large bowl, whisk together the eggs, heavy cream, salt, and pepper.
  • Stir in the cooked sausage, shredded cheese, bell peppers, mushrooms, and spinach.
  • Pour the mixture into the prepared baking dish.
  • At this point, you can cover and refrigerate overnight for a make ahead meal.
  • When ready to bake, preheat oven to 375 degrees Fahrenheit.

My favorite cousin, Suzanne, entered the post with HER brunch casserole recipe. What is super unique and smart about the casserole she brought was that it was a Make Ahead and Freeze recipe. That smart woman had this casserole already made and IN HER FREEZER just waiting until she needed it. She is a GENIUS. If you like omelets with ham, cheese, and all kinds of veggies in them (like mushrooms, tomatoes, and onions), this brunch casserole recipe will be YOUR favorite. Best of all, it is freezer safe for up to 3 MONTHS.

Total Cook Time: 1 hour (plus freezing and thawing)

Ingredients:

  • 1 pound ham, diced
  • 12 large eggs
  • 1/2 cup milk
  • 2 cups shredded cheese (cheddar or Swiss)
  • 1 cup chopped mushrooms
  • 1 cup chopped bell peppers
  • 1/2 cup chopped onions (optional)
  • 1 cup cherry tomatoes, halved
  • Salt and pepper to taste

Instructions for making and freezing:

  • Grease a 9×13 freezer safe baking dish.
  • In a large bowl, whisk together the eggs, milk, salt, and pepper.
  • Stir in the diced ham, shredded cheese, mushrooms, bell peppers, onions (if using), and cherry tomatoes.

Angie is finally in the house with the BEST part of our brunch. Her Mimosa recipe. This is the recipe she used. They were so good and really pretty to look at too.

Total Cook Time: 5 minutes

Ingredients:

  • 1 bottle champagne or prosecco, chilled
  • 1 cup orange juice, chilled
  • 1/2 cup strawberry puree (fresh strawberries blended)
  • Fresh strawberries for garnish
  • Orange slices for garnish

Instructions:

  • Make the strawberry puree by blending fresh strawberries until smooth.
  • Pour 1 tablespoon of strawberry puree into each champagne flute.
  • Add 2 tablespoons of orange juice to each glass.
  • Slowly top with chilled champagne or prosecco.
  • Gently stir to combine.
  • Garnish with a fresh strawberry and an orange slice.
  • Serve immediately.

She also made a mocktail non alcohol version for those that wanted their mimosa without champagne. Her brunch punch (or mimosa mocktails) was delicious and refreshing. It was a nice twist on traditional plain orange juice.

Total Cook Time: 5 minutes

Ingredients:

  • 2 cups sparkling water or club soda, chilled
  • 1 cup orange juice, chilled
  • 1/2 cup strawberry puree
  • 1/4 cup peach nectar (optional)
  • Fresh fruit for garnish (strawberries, oranges, raspberries)

Instructions:

  • Make the strawberry puree by blending fresh strawberries until smooth.
  • In a large pitcher, combine the strawberry puree, orange juice, and peach nectar (if using).
  • Stir well to combine.
  • Just before serving, pour in the chilled sparkling water or club soda.
  • Gently stir to combine.
  • Pour into champagne flutes or glasses.
