Cutting out alcohol for Dry January, or even just cutting down, does not mean you need to give up on fun and flavor. You can still enjoy a delicious and beautiful drink.
Some of the best non alcoholic cocktail recipes are inspired by classic drinks. They balance sweetness with a little bitterness. They have mouthwatering acidity and bubbles. They also get amazing flavor from herbs and spices.

How to Make It:

Note on cardamom honey syrup: To make the syrup, combine ½ cup honey, ½ cup water, and 4 to 5 crushed cardamom pods in a small saucepan. Bring to a simmer, stirring until the honey dissolves. Let it cool, then strain out the cardamom pods. Store in the fridge for up to 2 weeks.

The result is a deep red pitcher drink with just as much complexity as the original Spanish favorite.

What You Need:
- 4 cups water
- ½ cup dried hibiscus flowers
- ¼ cup honey
- 2 cinnamon sticks
- 4 sprigs fresh thyme
- 2 cups unsweetened pomegranate or cherry juice

- 1 lemon, sliced
- 1 apple, cored and sliced
- Sparkling water or club soda, for serving
How to Make It:
- In a saucepan, bring the water to a boil. Remove from heat and add the dried hibiscus flowers, honey, cinnamon sticks, and fresh thyme. Stir until the honey dissolves.
- Let the mixture steep for 10 to 15 minutes. Then strain it into a large pitcher. Discard the solids.
- Add the pomegranate juice and stir to combine. Refrigerate until completely cold, at least 2 hours.
- Just before serving, add the sliced orange, lemon, and apple to the pitcher.
- To serve, fill glasses with ice. Fill the glass about two thirds full with the sangria mixture. Top with a splash of sparkling water for fizz.

Note on rosemary simple syrup: To make the syrup, combine ½ cup water, ½ cup sugar, and 2 to 3 sprigs of fresh rosemary in a small saucepan. Bring to a simmer, stirring until the sugar dissolves. Let it cool, then remove the rosemary sprigs. Store in the fridge for up to 2 weeks.
